Changing our food- for the World

A study came out of the University of Helsinki earlier this year that found that switching to a new diet consisting of novel foods I.e. lab grown meat, Quorn, etc. could cut GHG emissions, water and land use, all by more than 80%. Considering food production is responsible for more than a third of GHG emissions, us embracing these new foods would be extremely beneficial for the environment - it is hard to look away from this option. My question is, how to get people to embrace these foods while they still have the choice of their regular options? What are the ethics of forcing these foods on people, by halting production of their regular choices? My idea is to see who agrees with me this might be uncomfortable but the best thing to do for the world.
