Voluntary mask zones - protecting the COVID vulnerable

I was shocked recently to hear stories of flight attendants announcing, mid-flight, the lift of the mandate of masks on planes, and subsequently passengers cheering and ripping their masks off. What about the vulnerable people on those planes who those masks were protecting, who expected masks to be worn for the whole flight? Does that not take a choice away from them? So, my idea is not to *not* relax COVID measures. We must eventually, sure. (Although I do think restrictions should be eased, based, in part, on convenience, and that wearing a mask on a plane is not that hard or inconvenient). But wouldn't it be good to have regions of public places (e.g. planes) that are still mask zones. Completely voluntary. Say the back three aisles - size proportionate to demand. But spaces where the vulnerable among us can still feel at least somewhat protected as the rest of us move on, without missing out! This can apply almost everywhere that people spend time being stationary - think public transport, movie theatres, concerts etc.!
